Beer poking, also known as Bierstacheln in German, is a winter tradition that involves heating a metal rod in a fire and then plunging it into a glass of beer. This causes sugars in the beer to caramelize and the foam to become extra frothy. Don’t worry – the beer remains cool and drinkable, its just meant to highlight the rich malt characteristics of the beer.
