IWA x O by Brush Dinner

O by Brush welcomes IWA Sake for an intimate 18-seat omakase experience exploring the intersection of Japanese cuisine and IWA’s fine-wine philosophy of sake. Chef Jason Liang will present a multi-course menu rooted in O by Brush’s progressive approach to Japanese cuisine, highlighting dry-aged seafood, pristine seasonal ingredients, binchotan, smoke, dashi, and Edomae-inspired techniques. Each course is designed around O’s focus on aging, temperature, texture and preservation. Created in Toyama by Richard Geoffroy, former Chef de Cave of Dom Pérignon, IWA applies the art of Assemblage to sake. Throughout the evening, guests will experience multiple IWA releases served at different temperatures and in different vessels, revealing how each expression evolves alongside the menu. Brenton Blanchard, who leads IWA’s U.S. business, will join Chef Jason throughout the evening to guide guests through this one-night collaboration.
