Rooted in Spanish tradition, rosca de reyes is one of Mexico’s most festive and culturally layered sweet breads. In this hands-on class, Chef Alex guides you through crafting this buttery, orange-zested brioche-style dough from scratch, adorning it with sugar paste and candied fruits that represent the jewels of a royal crown, making this a stunning edible centerpiece for any holiday celebration. Students will prepare both traditional roscas as well as filled variations featuring almond paste and chocolate chips, offering a playful twist on the classic celebration bread. While the roscas are rising, the class will also prepare coricos de maíz, an iconic corn polvorón known for its crisp texture and deep roots in Mexican baking traditions.
