Join us for a hands-on class dedicated to the craft of making fresh corn tortillas from scratch. Working with masa made from nixtamalized corn, you’ll learn how to mix and handle dough to achieve the supple texture that defines a great tortilla. Using traditional tortilla presses, you’ll shape and cook tortillas on a hot griddle, learning what to look for as they cook, blister, and gently puff — the hallmark of tortillas made well. Once the tortillas are underway, we’ll prepare a selection of classic accompaniments such as pico de gallo, seasoned beans, and rice, designed to highlight the warmth and freshness of the tortillas themselves. Throughout the class, our professional chef instructor(s) will share insight into technique, timing, and small details that make a noticeable difference in the final result. The class concludes with time to gather around the table and enjoy the meal you’ve prepared together — a relaxed, social way to experience the rewards of handmade tortillas, just in time for Cinco de Mayo. Water, sodas and seltzers provided.
