Brolito's Food Truck

Boricua built. Rhode Island roots. We don’t miss. Catch us out there. Breweries, festivals, all over Rhode Island. The calendar knows where. Brolito’s started with a nickname. Bryan Rolon’s coworkers called him “Brolo”. First and last name, mashed into one. He added “-ito” as a nod to his Latin heritage, and a food truck was born. Before the truck, Bryan put in years behind the line at Giusto in Newport. He started in the kitchen and worked his way to running it. Put in the time, earned every step. That’s where the technique came from. Brolito’s was always next. Every sandwich comes from somewhere real. Some of it Bryan grew up eating. Some of it he discovered along the way and couldn’t let go of. We cook what we love. We try to do it justice. We rotate through breweries, festivals, and events across Rhode Island. Check the calendar above for our next stop. Yes. We take cash, all major credit cards, and Cash App Pay. We don’t have a dedicated gluten-free menu, but any sandwich can be served over fries instead of bread. Heads up: our prep surfaces aren’t fully separated, so there’s some cross-contact risk there, though the fryer itself is gluten-free. Ask at the window if you’re dealing with a serious allergy. The blackened mojo chicken has the most kick. Birria runs warm, not spicy. Everything else is mild, ask for extra heat if you want it. It means smothered in onions. It’s our answer to a cheesesteak, the onions braised down slow until they caramelize, not just griddled for a minute and called done. Yes. We do breweries, festivals, and private events.
